When choosing the best panini maker for your needs there are three main features to look for:

* Non-stick plates - this is absolutely vital, so all the panini sandwich makers featured on this page have plates with a non-stick coating. The coating makes it easier to lift your sandwiches off the plates when they are cooked, and simple to wipe clean afteruse. Take care of the non-stick coating by only cleaning it gently with a soft wet paper towel. If you need to use any sort of tool on it, to help remove a sticky sandwich, or chip of some dried cheese, use a silicone spatula as this will not cause scratches.

* Removable plates - there are some panini sandwich makers with removable plates available, but they are not great quality, so they have not been included in this review. Problems with getting the plates to stay in place during operation can lead to sandwich-making disasters.

* Floating hinge - to be a true panini press, the machine must have a floating hinge. This enables the top plate to be lowered evenly across the panini, so one end is not squashed. Ideally the hinge should be height-adjustable so you can alter it according to the thickness of your sandwich.

I'll get us started. My favourite is grated cheddar cheese, with spring onion and a few slices on tomato. If I am feeling really naughty I add some butter to the outside of the bread before toasting.

I like to use leftover pasta from the fridge and add a slice of cheese. It's like a pasta and cheese pie.

I've got a Breville machine which is about 7 years old now and the only kitchen gadget which is regularly taken out of the cupboard (unlike the juicer, breadmaker...)

I like Asda paninis from their (home-made?!) bakery dept, they have lots of air-holes and aren't heavy & doughy like M&S and Tesco pre-wrapped ones.

My Favourite recipes are Brie & Smoked Salmon or Chicken, Cheddar and Sweet Chilli sauce.

LadyWriter - Cheddar and sweet chilli sauce sounds fantastic. I have just started spreading a bit of mango chutney on before adding the cheese, but I'm going to give sweet chilli sauce a try next.

My Krups Panini is a must have! It never gets put away like some other appliances that I have. I also love the fact that it has a floating hinge so that I can make the panini's however thick I want them depending on appetite...yummy!
